Los Mochis is seeking a highly skilled, creative and ambitious Pastry Sous Chef to join our flagship at 100 Liverpool Street.
As the Pastry Sous Chef, you will be working closely with the Head Pastry Chef and share responsibility for overseeing all aspects of our pastry department, including menu development, production, and maintaining the highest standards of quality and presentation. This leadership role requires exceptional culinary expertise, strong management skills, and a passion for creating exquisite pastries in a nut and gluten free kitchen.

Key Responsibilities:
Develop and execute innovative pastry menus that align with Los Mochis' culinary vision and customer preferences.
- Oversee the production and presentation of all pastries, ensuring consistency, quality, and adherence to food safety standards.
- Train, mentor, and supervise pastry team members, fostering a positive and collaborative work environment.
- Manage inventory, ordering, and cost control to optimize profitability while minimizing waste.
- Collaborate with other departments, such as the kitchen and front-of-house, to ensure smooth operations and exceptional guest experiences.
- Stay updated with industry trends, techniques, and ingredients, and incorporate them into the pastry program when appropriate.
- Maintain a clean and organized pastry kitchen, always adhering to sanitation and hygiene standards.
- Ensure compliance with all local health and safety regulations.

Requirements/skills:
- Proven experience as a Pastry Sous Chef or in a similar role, preferably in a high-end restaurant or hotel.
- Extensive knowledge of pastry techniques, ingredients, and flavour combinations.
- Strong leadership and management skills, with the ability to motivate and inspire a team.
- Excellent organizational and time management abilities, with the capacity to handle multiple tasks simultaneously.
- Creativity and a keen eye for detail, with the ability to develop visually stunning and delicious pastries.
- Strong understanding of food safety and sanitation practices.
- Ability to work under pressure and meet tight deadlines without compromising quality.
- Excellent communication and interpersonal skills, with the ability to collaborate effectively with team members and other departments.
- Flexibility to work evenings, weekends, and holidays as required.
Preferred Qualifications:
- Culinary degree or relevant certification in pastry arts.
- Experience in menu development and creating seasonal offerings.
- Knowledge of international pastry trends and techniques.
- Familiarity with local and sustainable sourcing practices.
