Join the award-winning culinary team at Nobu Hotel London Portman Square as our Senior Pastry Chef de Partie. In this role, you’ll take ownership of your pastry section, producing beautifully crafted dishes that reflect Nobu’s signature style. You’ll work closely with the Pastry Head Chef, elevating every plate with technical skill and artistic flair while supporting the smooth, efficient running of the pastry kitchen.

You will

  • Prepare and present all pastry dishes to Nobu standards, ensuring exceptional quality and consistency
  • Oversee your section, ensuring it is fully set, organised and running smoothly
  • Follow Nobu recipes precisely and maintain correct portioning and production levels
  • Uphold strict hygiene, food safety and allergen standards, ensuring safe storage and clean workspaces
  • Monitor equipment, report maintenance needs and ensure tools are well cared for
  • Support the creation of tasting menus, Omakase dishes and special pastry items
  • Work collaboratively with the team, offering guidance and training where needed
  • Provide genuine, attentive service that enhances the guest experience
  • Liaise confidently with other departments to support smooth kitchen operations
  • Demonstrate a proactive, positive attitude and uphold Nobu values in every interaction

About You

You are an experienced Pastry Chef de Partie or Senior CDP with strong technical skills, exceptional attention to detail and a passion for creating memorable culinary moments. You work well under pressure, uphold high standards, and enjoy being part of a supportive, collaborative team. You’re proactive, solutions-focused and eager to keep developing your craft.
