Sommelier

At Lavo, we believe that every glass poured tells a story!  We are seeking an experienced and passionate Sommelier to join our team, someone who understands that exceptional wine service is not just about what’s in the bottle, it’s about creating memorable experiences.

As Sommelier, you will be responsible for curating and managing our carefully considered wine list, guiding guests through thoughtful pairings and sharing your knowledge with both our guests and team.  Working closely with the Restaurant Management Team, you will elevate our beverage programme with insight, elegance and creativity.

• Leading all aspects of wine service during service periods.  
• Maintaining and developing the wine list in line with Lavo’s identity and guest profile.
• Conducting regular training and tastings for front-of-house team members
• Managing stock levels, cellar organisation and supplier relationships.
• Collaborating with the Executive Chef and Restaurant Management to craft unique pairing experiences.

You are a confident, knowledgeable professional who thrives on guest interaction and leads with warmth, generosity and precision.  You are energised by a fast-paced dining room and bring genuine enthuse to sharing your expertise.  Calm under pressure and attentive to detail, you take pride in delivering an exception standard of service, every time.

• Proven experience as a sommelier in a high-end hospitality setting.
• A recognised sommelier qualification (WSET Level 3 or equivalent)
• Excellent knowledge of both Old and New World wines, as well as spirits.
• A hands-on, service-driven approach with a natural flair for hospitality.
• Strong communication and presentation skills.
• A meticulous approach to wine care, inventory and cellar management.
• The ability to train, inspire and support a front-of-house team.
• A collaborative mindset, and the confidence to lead wine service across busy service areas.
