Position Overview

As Pastry Commis, you bring creativity, precision, and consistency to all dessert offerings. You are responsible for preparing high-quality pastries, cakes, and plated desserts, while ensuring kitchen hygiene, visual presentation, and teamwork in line with Lucia standards. Your role contributes directly to guest satisfaction and the overall success of the culinary team.

Key Responsibilities

• Prepare a wide variety of desserts including cakes, pies, ice creams, and pastries.

• Decorate and present desserts with creativity and attention to detail.

• Follow recipes, portioning, and plating guidelines to maintain consistency and quality.

• Control daily deliveries, manage stock, and ensure proper storage and rotation.

• Maintain cleanliness and hygiene at your workstation at all times.

• Monitor productivity, speed, and accuracy in pastry preparation.

• Support in developing new pastry creations aligned with the Lucia concept.

• Handle pastry equipment and tools safely and ensure they remain in proper condition.

• Reduce waste through careful stock management and food cost awareness.

• Ensure compliance with food safety standards and health regulations.

• Communicate effectively with both kitchen and service teams.

• Train or support junior pastry staff when required.

What We’re Looking For

• Previous experience in a professional pastry kitchen.

• Strong knowledge of baking and pastry techniques for a wide variety of desserts.

• Creativity, attention to detail, and a passion for sweets.

• Team player with good communication and collaboration skills.

• Organized, reliable, and productive under pressure.

• Knowledge of kitchen sanitation, food safety, and stock control.

• Comfortable working in a fast-paced, high-volume environment.
