Located in the Cotswold, Cowley Manor is one of the most famous buildings in the country. The luxury boutique hotel is composed of 31 rooms, a bar and a restaurant along with an incredible terrace, fantastic grounds and a stunning C-Side Spa.
Job: Bar Manager at Cowley Manor
Based in: Cowley, Cheltenham
Reports to: F&B Manager
DUTIES AND RESPONSIBILITIES
Operational Management
- Oversee the operations, ensuring the smooth running of the bar.
- Create the cocktails and drinks menu, changing the menu at least once per season.
- Ensure menus are up-to-date and correct.
- Prepare and serve high-quality cocktails, all while adhering to our principle of aiming to provide the best drinking experience without a hint of pretension.
- Ensure consistent, high-quality beverages are served to customers.
- Create a welcoming environment for customers, assess their needs and make recommendations.
- In cooperation with the Restaurant Manager, handle and provide adequate solution to customer complaints.
- Deal with customer feedback, sharing to the team and implementing actions.
- Propose rapid and well-thought-out solutions in the event of unforeseen circumstances.
- Oversee the cleanliness of staff and the bar area and pay attention to possible health hazards and regulation violations.
- Apply all Food and Beverage Regulations.
- Report every maintenance action and repairs needed to the General Manager.
Team Management
- In cooperation with the Human Resources department, participate in the recruitment and onboarding of the bar team.
- Manage the schedule of the bar team. Ensure the bar is fully staffed, particularly during peak times.
- Train and supervise the bar team, encouraging upselling.
- Manage a training plan for the bar team, encouraging their career development within the company.
- Manage staff complaints of the bar team, report complaints and issues to the General Manager for eventual disciplinary procedures.
- In cooperation with the General Manager, conduct regular performance review, appraisals, and strategize for improving staff performance.
- Create a positive work environment, ensuring a high employee engagement and optimising the employee retention.
- Ensures all legal requirements are adhered to (i.e. Wage and Hour/Breaks, Health and Safety, etc.).
- Record number of hours worked for each member of the team bar, track absences, lateness, request for days off, holidays and sick days.
- Put in place opening and closing procedures for the bar team. Regularly verify and record that the procedures are followed along.
Administrative and Financial Management
- Monitor inventory and ensure adequate stock
- Alcohols & Spirits

- Bartending materials (shakers, strainers, etc)
- Bartending accessories (napkins, straws, etc)
- In cooperation with the General Manager and the UK F&B Director, optimise the profitability of the venue by managing margins through beverages sales.
- Monitor key activity indicators and take corrective actions where necessary.
- Monitor and maintain a consistent payroll.
- Ensure the maintenance of staff records and the monitoring of hours worked.
- Carry out regular reporting on activities.

- Have excellent spirits & classic cocktails knowledge.
- Excellent organisational and leadership skills.
- Be well spoken with excellent communication skills.

- Social, engaging, and motivated.
- Flexibility to respond quickly and positively to a range of work situations.
- Knowledge as well as abilities in other languages would be beneficial.
- Proof of eligibility to work in the UK.
