Sabor is looking for a Wine Manager who shares our enthusiasm, dedication, and passion for great food and wine, vibrant hospitality, and delivering a unique culinary experience.

This is a fantastic opportunity for a passionate Wine Manager who is looking for a new role in a Michelin starred restaurant, within a critically acclaimed group.

The Restaurant

Founded by Nieves Barragan and José Etura, Sabor (meaning flavour in Spanish) takes you on a journey from the tapas bars of Andalucía, through to the asadors of Castile and the seafood restaurants of Galicia. Sabor focuses on capturing the flavour of Spain as well as showcasing the use of traditional ingredients and cooking methods, and a relaxed approach to dining. The quality of the produce our kitchen enjoys is unparalleled.

Upstairs in the Asador, whole suckling pigs are cooked in the wood-fired oven, and octopus are simmered in giant copper pots. Downstairs in the restaurant, a seafood counter sits next to dining bar, where guests can oversee the kitchen in full service.

The Position

This is a full-time service-based management role. As Wine Manager you will be responsible for delivering the highest levels of service and an exceptional guest experience within the restaurant. You will maintain the wine list, liaise with suppliers, train the team to deliver impeccable wine service and contribute to managing sections along with our FOH team.

Your role will blend expertise, enthusiasm, and a guest-centric approach to create memorable dining experiences while upholding the highest standards of quality and professionalism.

Responsibilities:

  • Manage the service of wine and overseeing presentation standards
  • Confidently manage a section of the restaurant as an active member of the FOH management team
  • Deliver confident and professional communication with guests regarding wine selections
  • Maintain all wine lists so they are up to date and factually correct on vintages, prices and listings – digitally and physically
  • Collaborate with the Head of Wine to maintain an outstanding wine list. Collaborate on new creative, list audits and reviews
  • Deliver regular wine trainings which are relevant to the offering currently listed
  • Manage wine cellar and all stock on-site
  • Carry out weekly wine stock-taking, ordering, purchasing and liaising with suppliers
  • Maintain and develop an excellent knowledge of wine, wine suppliers and attend wine tastings

The successful Wine Manager will have:

  • An engaging and personable nature
  • A passion for hospitality and delivering an exceptional guest experience
  • Prior experience as a Wine Manager or Head Sommelier within a quality restaurant
  • WSET Level 3 or equivalent Sommelier qualification (preferred)
  • A professional and confident communication style with fluent English language ability
  • Proven ability to lead, inspire and motivate a team
  • An excellent knowledge of food and beverage
  • The eagerness to continually learn and develop your career within hospitality
  • Good level of PC literacy (Microsoft Office)
