This is a unique role across two brands: Gaucho who have been serving quality Argentinan beef and offering events, masterclasses for years, as well as M Restaurants - the multifaceted award winning venues who include RAW and GRILL restaurants. Salary - Up to £50k depending on experience

Essential Skills and Essential Experience

· Has a minimum of 2 years’ experience of running multi-unit operations
· Has high end, fine dining fresh food background. Michelin desirable
· Food safety level 4

Role Purpose:

The Operations Chef will be fully accountable for the restaurants in terms of guest experience, finance, sales growth, legal compliance and team development BOH and supporting FOH. The Operations Chef work closely with the Head of Food Operations to run a smooth and successful operation in terms of people, product, compliance and finance. The Operations Chef will take charge of the key areas of food standards/spec delivery, achieving timings in service, implementations of specials, delivering labour within budget, cost of sales for food and both food hygiene and health and safety compliance. As ambassadors of the business they share their vision with the management teams in the restaurants work to develop those around them to drive the business forwards.

Financial Responsibilities
• Manage revenue conversion - even when top line drops
• Passed the finance program
• Weekly financial analysis shared with the team
• Achievement of food end of month stock results within 0.5 variance
• Drives labour controls at each site to achieve budgeted labour requirements

People
• Oversees team objectives & development plan
• Effective management of manpower (flexing) for trends, peaks and troughs
• Effective management of non-complex employee relations issues
• Effective recruitment - right people, right place, right time
• Executes the succession plan in place, whilst improving retention
• Full responsible of service & the training academies / course attendance
• Effective management and delegation to all members of the management team
• Practices open door policy with the team and makes time to ensure employee welfare
• Develop training systems that will strengthen the skill set of line chefs
• Develop structured training programme for all chefs joining the company at management level
• Coordinate holiday cover in restaurants for kitchen management
• Develop an internal progression programme for future talent mapping

• 95% or above on internal monthly audits (iaudits)

Marketing
• Host events as per marketing calendar / strategy for the brand

Essential skills
• 2 years Operations Chef at multi-site level
. High end, fine dining, fresh food background - preferably Michelin
• London food scene knowledge

Please note we cannot consider candidates with only casual dining or pub background, must have premium, fine dining experience.

• Completed all management courses including mandatory courses for the position. Use of similiar software systems
