Zuma is a contemporary Japanese restaurant collection, inspired by the dynamic Izakaya dining style. This role will be based in Zuma Mykonos, a first-of-its-kind lifestyle destination. Featuring a sleek infinity-pool, lounge, restaurant and resident DJs, our vibrant seasonal location is a dynamic lifestyle concept that captures the essence of contemporary dining and entertainment making it the dining destination in Mykonos.

Main Duties
- Lead and inspire the sushi team, delegating duties to maintain high standards, ensure smooth operations, and foster a collaborative environment
- Oversee the quality of raw ingredients, ensuring premium standards, and conduct regular stock takes to manage inventory effectively
- Monitor operating costs, manage budgets, and implement strategies to control expenditure and optimize resources
- Regularly review and refine the menu, introducing new and creative dishes that align with Zuma’s culinary vision
- Ensure efficient food preparation practices to minimize waste while adhering strictly to Health & Safety and Food Safety regulations
- Train, mentor, and evaluate the sushi team, conducting regular performance reviews to support growth and maintain a positive, high-performing work environment
