JOB PURPOSE:

The purpose of the role is to oversee and direct a seamless running of the kitchen by providing a highly efficient and effective service whilst ensuring that all food items in any section of the kitchen are prepared according to the standard recipes and guest satisfaction is consistent with the agreed standards.


MAIN DUTIES:

  • Supervise kitchen team, delegate duties and responsibilities appropriately to ensure standards of operation and safety are maintained.
  • Monitor kitchen’s operating costs, work within the budgets and take corrective action where necessary to reduce expenditure.
  • Estimate food consumption and plan orders of perishables and equipment accordingly.
  • Exercise efficient labour management on shift, controlling labour costs.
  • Assist with the preparation and regular update of the departmental budget, in close cooperation with the Executive Chef and Managing Director, ensuring targets are met and costs are effectively controlled.
