Chef de Partie

Chef de Partie is a skilled culinary position responsible for overseeing a specific section or station in the kitchen. Working collaboratively with the culinary team to prepare and plate dishes to the highest standards while adhering to established recipes and culinary techniques. The Chef de Partie is responsible for maintaining the cleanliness and organisation of their station, ensuring that all food safety and sanitation standards are met as well as the ability to guide and follow operating procedures of Milk Beach.

Qualifications

  • Proven culinary experience, typically 2-5 years in a professional kitchen and/or Culinary degree or relevant certification is a plus.
  • Strong knowledge of cooking techniques, kitchen equipment, and culinary terminology.
  • Attention to detail and the ability to work well under pressure.
  • Excellent communication and teamwork skills.
  • Ability to stand for extended periods and lift heavy pots or pans.
  • Ability to work all sections in the kitchen.
Key Responsibilities

1. Food Preparation: 

  • Prepare and cook dishes in accordance with established recipes, portion sizes, and quality standards.
  • Ensure that all ingredients are fresh and of high quality.
  • Execute cooking techniques with precision and consistency.
2. Management 
  • Oversee a specific section of the kitchen (e.g., sauté, grill, pastry) and manage all aspects of food preparation for that station.
  • Maintain stock levels, replenish ingredients, and notify the Sous Chef or Head Chef of any shortages.
3. Quality Control
  • Ensure that all dishes leaving their station meet the restaurant's presentation and taste standards.
  • Taste and adjust seasonings as necessary.
  • Control and organise all incoming orders.
  • To process all incoming orders immediately and organise in walk in.
4. Kitchen Hygiene & Maintenance
  • Maintain a clean and organised station, following food safety and sanitation guidelines.
  • Properly label and store ingredients. FIFO (Stock Rotation)
5. Collaboration
  • Coordinate with other members of the culinary team to ensure smooth kitchen operations.
  • Assist in training junior kitchen staff.
6. Menu
  • Collaborate with the Sous Chef or Head Chef to develop new dishes or improve existing ones within their station.
7. Adherence to Regulations
  • Follow all health and safety regulations, including food handling and storage guidelines.
  • The ability to stick to Milk Beach behavioural and general guidelines.
  • Treating staff respectfully, not raising voice or making individuals within the team both mentally and physically.
8. Adaptability
  • A willingness to learn quickly able to handle pressure, and make quick decisions when unexpected situations arise. To have an ability to work multiple sections.
